This layered Italian veggie lasagna stacks spinach, zucchini, and ricotta between noodles for a cheesy, vegetable-rich delight. Parents will appreciate its make-ahead potential and how it hides veggies for picky eaters, with soft textures safe for mashing or small bites.

Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
Cook lasagna noodles in boiling water for 8 minutes until flexible, drain and lay flat.
Mix ricotta, egg, minced garlic, chopped spinach, grated zucchini in a bowl.
Spread 1 cup marinara in dish bottom.
Layer 3 noodles, half ricotta mix, 1 cup marinara, 1/2 cup mozzarella; repeat layers.
Top with last noodles, remaining sauce and cheese.
Cover with foil, bake 25 minutes; uncover and bake 15-20 minutes until bubbly and golden on top.
Let rest 10 minutes; cut into small, soft squares for kids and ensure cooled.
Refrigerate in airtight container for up to 3 days. Freeze unbaked for up to 2 months.
Assemble the night before and bake when ready. Use no-boil noodles to save time.
