Pumpkin & Ricotta Gnocchi Pillows

Ingredients

  • 1/2 cup pumpkin puree (canned or homemade)
  • 1/2 cup ricotta cheese
  • 3/4 cup all-purpose flour
  • 2 tbsp parmesan cheese, grated

Method & Instructions

  1. 1

Bring a large pot of water to a gentle boil.

  2. 2

In a medium bowl, mix pumpkin puree and ricotta cheese until smooth.

  3. 3

Gradually stir in the flour and parmesan until a soft, sticky dough forms. Do not overmix or they will be tough.

  4. 4

Dust a clean surface with flour. Take a handful of dough and roll it gently into a 'snake' about 3/4 inch thick.

  5. 5

Use a knife to cut the snake into 1-inch pillows or nuggets.

  6. 6

Drop the gnocchi into the boiling water in batches.

  7. 7

Cook for 3-4 minutes. They are done when they float to the surface.

  8. 8

Remove with a slotted spoon and let cool on a plate.

  9. 9

Before serving, press each pillow flat with the back of a fork. For babies 8–12 months, cut each flattened pillow lengthwise into thin, soft strips; for toddlers up to 4 years, cut each pillow in half lengthwise or into small pieces that suit their chewing. Serve plain or with a tiny bit of olive oil.

Storage & Preparation Notes

Storage Instructions:

Refrigerate cooked gnocchi promptly and use baby portions within 1–2 days. Freeze uncooked gnocchi on a tray, then bag; boil from frozen.

Helpful Toddler Feeding Tips:

If the dough is too sticky to roll, simply scoop small amounts with a teaspoon directly into the boiling water.
