Oven-baked chicken nuggets with a crisp coating.

Preheat oven to 400°F (200°C) and grease a baking sheet with verified soy-free cooking oil.
In a bowl, mix ground chicken, egg, spices, and half of the dairy-free, soy-free breadcrumbs.
Place the remaining breadcrumbs in a shallow dish.
Form tablespoon-sized balls of the chicken mixture and flatten them into nugget shapes.
Press each nugget into the breadcrumbs to coat the outside lightly.
Place on the baking sheet and spray tops with a little verified soy-free cooking oil (optional, helps browning).
Bake for 15-18 minutes, flipping halfway through, until internal temp reaches 165°F (74°C) and outsides are golden.
Allow to cool completely. Cut nuggets into soft, age-appropriate pieces before serving or packing into a lunchbox.
Refrigerate for 3 days. Freeze for up to 2 months.
Make a double batch and freeze raw or cooked for busy weeks.
