A vegetarian bite made with quinoa, broccoli and cheddar. The savory broccoli flavor is mild and the texture is soft and crumbly.

Preheat oven to 375°F (190°C) and grease a mini muffin tin.
Ensure broccoli is steamed until very tender and chopped into tiny pieces (no large stems).
In a large bowl, combine the cooked quinoa, chopped broccoli, shredded cheese, beaten eggs, and onion powder.
Mix thoroughly. The egg and cheese act as the binder.
Spoon tablespoon-sized portions into the mini muffin cups, pressing down gently to compact them.
Bake for 15-20 minutes until the edges are golden brown and the centers are fully set, reaching 160°F (71°C) on a food thermometer.
Let them cool in the pan for 10 minutes to firm up before removing.
Serve warm or at room temperature. For babies under 12 months, crumble or cut each bite into small, soft pieces and check there are no firm bits of broccoli stem; for toddlers, cut bites in half or into pieces that suit their chewing.
Refrigerate promptly and use baby portions within 1–2 days. Freeze flat on a baking sheet, then transfer to a bag for up to 2 months.
Cook the quinoa in low-sodium vegetable broth instead of water for extra flavor.
