Baked Sweet Potato with Black Beans and Avocado

Ingredients

  • 4 large sweet potatoes
  • 2 cups no-salt-added black beans, cooked or canned and rinsed
  • 2 ripe avocados
  • 1 cup corn kernels, fresh or frozen
  • 2 limes
  • 1/4 cup fresh cilantro, finely chopped (optional)
  • 1 tsp ground cumin
  • 1 tbsp olive oil
  • to taste, adult portions only salt and pepper

Method & Instructions

  1. 1

Heat the oven to 425°F (220°C) and line a baking sheet with foil.

  2. 2

Scrub the sweet potatoes, pat them dry and prick each one 4 to 5 times with a fork.

  3. 3

Bake for 45 to 50 minutes, until a knife slides into the thickest part with no resistance and the flesh is very soft.

  4. 4

While they bake, heat the olive oil in a skillet over medium heat. Add the beans, corn and cumin and cook for 6 to 8 minutes, stirring, until the corn is very soft and the beans are hot all the way through.

  5. 5

Take the pan off the heat and squeeze in the juice of 1 lime. Spoon out the child's portion now, before any salt; season the rest with salt and pepper if you like.

  6. 6

For children under 2, mash the child's portion of beans and corn with a fork until no whole beans or whole corn kernels remain. For children 2 and older, press each bean flat with the back of a fork.

  7. 7

Halve the avocados, remove the pits and scoop out the flesh. Mash a little for the child's portion and dice the rest.

  8. 8

Cut each sweet potato open lengthwise, fluff the flesh with a fork and let it cool until warm.

  9. 9

For babies 9 to 12 months, scoop the sweet potato flesh away from the skin and mash it with the beans and avocado to a soft, lumpy mash.

  10. 10

For toddlers, serve scooped sweet potato with the mashed bean mixture and avocado on top, or offer soft, skin-free wedges of sweet potato to hold. Remove the skin for children under 2.

  11. 11

For older children and adults, spoon the bean mixture into the opened potatoes and top with diced avocado, cilantro and lime wedges.

  12. 12

Test the temperature on the inside of your wrist and serve while your child sits upright and supervised.
